This easy and healthy 1-minute lunch wrap post is about as basic as it gets for recipes, but this is real life for me right now.
I can spend hours racking my brain about what recipes and workouts to share with you guys. But I find that what performs best, are the recipes I’m actually eating and workouts I’m actually doing on a daily basis.
And since I’ve pretty much lived off these 1-minute lunch wraps since the day Brody was born, I thought they were worth sharing.
So whether you’re a college student on a budget or a busy mom with multiple lunch boxes to pack, you’re going to love these easy and healthy 1-minute lunch wraps. Find more of my easy sandwiches and wraps here!
The best recipes are ones you can convert into two different recipes using almost the same ingredients. And that’s what I have for you with these easy and healthy 1-minute lunch wraps.
First we have the basic turkey wrap. Made with 5 simple ingredients — a sprouted grain or whole wheat wrap, deli turkey, avocado, spinach, cucumber slices, and some optional sprouts and dressing if you need a bit more flavor {I personally love Tessemae’s Cracked Pepper dressing for this wrap}!
Lay the wrap on a plate and mash 1/4-1/2 avocado on the wrap using a fork. Then add deli turkey, sliced cucumber, spinach and any additional toppings you’d like.
Wrap it up and enjoy!
Second we have the chickpea smash wrap in case you feel like going meatless. Also, made with 5 simple ingredients — a sprouted grain or whole wheat wrap, chickpeas, avocado, spinach, cilantro, and some optional lime juice.
Chickpea Smash Wrap
Ingredients:
1 sprouted grain or whole wheat wrap
1/4 c chickpeas, rinsed and drained
1/2 avocado, mashed
handful spinach
cilantro to taste
optional: 1/2 fresh lime, juiced
Directions:
Lay the wrap on a plate and mash the chickpeas with the avocado on the wrap using a fork or potato masher. Then add spinach and cilantro, as well as, any additional toppings you’d like.
Squeeze some fresh lime juice over the top, wrap it up, and enjoy!
If you’re feeling extra hungry you can combine these two wrap recipes for one, avocado, turkey, and chickpea mega-wrap!

These wraps look delicious! Can’t say I’ve thought about making a wrap with chickpeas but I like hummus, so I’m guessing I’ll like them! I have to admit, my lunches are pretty much the same thing over and over again so I’ll definitely have to try them out!
Hi Kathleen! Yes, these wraps are my go-to lunch staples and the chickpea smash wrap is basically like making it with hummus :)! And I’m with you I’m kind of boring when it comes to my lunches and I usually have these wraps on repeat all week long. But when you find something you love, you gotta stick with it!
