Hi my name is Lindsey Bomgren, and I’m a time-optimist. My good friend Abby coined the term, time-optimist, and I’ve ran with it every since. Basically, I’m attempting to avoid the glorification of ‘busy’. Instead of saying, ‘I’m so busy’ all the time, I’ve realized that I choose to be ‘busy’ by over committing my time.

Aka I’m a time-optimist who thinks that I can start my day with 30 minutes of reading, clean out my overflowing email inbox, help run a lunch-hour event, followed by a client meeting, then write a blog post, teach a barre class, jet home, shower, make dinner, then run out the door to bible study with the hubs and make it home in time to prep all my meals for the following day and still get my solid 8 hours of sleep before I do it all over again.

You see in my head I have this ideal entrepreneur life — I wake up and get a relaxing hour of reading, prayer, meditation; then I work, get a workout in, work some more and have a beautiful meal on the table when my husband comes home.

But in fact, my life is the very opposite, my mornings are rarely peaceful as I have to have a perfectly curated Instagram post live between 7-8am and then I end up diving into email, become overwhelmed with to-do’s and my hour of reading and meditation…well who has time for that. And as for that beautiful dinner on the table, well you can ask my husband how many bowls of cereal have been substituted in it’s place {but hey at least it’s Love Grown cereal made with garbanzo beans and lentils}.

So while I may seem like I have it all together when I show up on a segment of Twin Cities Live with perfectly prepared snacks I always have on hand, know that the reality is I was wearing the same outfit i’ve been wearing for almost a week straight because my clean clothes have been sitting in the dryer for over 4 days.

Which is why today’s recipe is a 5-minute green goddess quinoa salad. A healthy blend of colorful veggies that can be tossed together in 5-minutes or less; this 6-ingredient green goddess quinoa salad is mine, and every busy woman’s, dream bowl.

5-minute green goddess quinoa salad

It’s high in fiber, iron, and vitamin C, so you can see all the healthy reasons why I love this salad. Not to mention it makes the perfect lunch, group dining side salad or main dish if you top it with a little extra protein {like, lemon chicken}. 

If you have the quinoa pre-cooked, which I like to prep in bulk at the beginning of the week, this salad can be tossed together in 5 minutes or less. Simply combining quinoa with kale/broccoli slaw, cucumber, onion, avocado, and topping with sliced almonds for an extra crunch.

The fresh lemon and olive oil dressing is just as effortless as the salad. Literally squeezing 1/2 fresh lemon, drizzle of olive oil and sprinkle of sea salt and pepper.

Ingredients
  • Salad:
  • ½ c cooked quinoa
  • 2 c broccoli kale slaw {i personally love trader joe's}
  • ¼ c cucumber, diced
  • ¼ c red onion, diced
  • ¼ avocado, diced
  • ¼ c sliced almonds
  • Dressing:
  • ½ fresh lemon, squeezed
  • 1 tbsp extra virgin olive oil
  • salt + pepper to taste
Instructions
  1. Combine quinoa, broccoli kale slaw, cucumber, red onion and avocado in a large bowl.
  2. Add fresh lemon, olive oil, salt and pepper to taste and toss all ingredients together.
  3. Top with sliced almonds and enjoy!
Notes
*Feel free to double recipe to make a larger side salad for group dining.
**Add additional protein of choice to make this a more hearty salad.
***I personally love Trader Joe's broccoli kale slaw blend.

    • Seriously Katie! I’m sitting here wondering how it’s already 12:30 in the afternoon, my day started at 5:30am and I’ve only checked two-to-three boxes off my to-do list and have so many more to go…but yes this salad is my go-to lunch staple and I can’t believe it’s taken me this long to share it!
