Hello December and hello all things Christmas, including Christmas cookie recipes! Ok, so i know these delicious little no-bake bites don’t exactly scream Christmas cookie, but they are too good not share {and for you not to share with your family}.
Anyone who loves cookie dough {which in my world is everyone} will love these easy, 3-ingredient cookie dough dessert bites. And yes, you read that correctly, they are only 3-ingredients. All of which you most likely have at home right now — oats, ripe bananas and dark chocolate chips. That’s it.
Literally the easiest and healthiest no-bake dessert bites you’ll ever make. That is, if you actually get to making them into dessert bites before eating all of the delicious, egg-free cookie dough.
But that’s the beauty of these cough dough dessert bites, they can be enjoyed so many different ways:
eat the dough straight out of the bowl
make them into no-bake bites
turn them into a truffle by removing the chocolate chips and dipping them in dark chocolate
pair the dessert bites with banana ice cream to make cough dough ice cream that’s better than a DQ Blizzard
The options are pretty much endless as there are so many healthy and delicious ways to enjoy this sweet treat.
So whether or not you think these gluten-free, dairy-free, egg-free and guilt-free, cookie dough dessert bites are Christmas cookie material; you must give them a try because they are my favorite no-bake, healthy treat. And I think they are too good not to share with loved ones this time of year!

Serves: 12
Ingredients
2 large ripe bananas
2 c oat flour {or 2 ½ - 3 c old fashioned oats finely ground in food processor or high speed blender}
¼ c dark chocolate chips
Instructions
If making oat flour, place rolled oats in food processor or high speed blender and blend until oats become oat flour {the fine consistency of flour}.
in large mixing bowl combined ripe bananas with oat flour, mix well.
add dark chocolate chips or cacao nibs and mix well.
roll into 1" bites and place on baking sheet covered with parchment paper. if the dough is too sticky you may need to add more oat flour or roll the bites with slightly wet hands to avoid the dough sticking to your hands.
Enjoy and store leftovers in the fridge for up to one week.
This recipe makes approximately 24 bites or 12 servings, 2 bites per serving.

these look great lindsey! they’re no bake–correct? i’m a little confused because it says to remove from the oven and let cool–but I’m assuming they’re just roll and go 🙂 Thanks for sharing lady!
