Healthy Edible Cookie Dough + The Best Lactation Cookies

I’ve turned my healthy, egg-free edible cookie dough recipe into the best lactation cookie! This lactation cookie recipe is an easy and delicious way to support  milk production for breastfeeding mothers; AND the whole family will love these healthy chocolate chip cookies. That is, if you actually get to baking the cookies before eating all the egg-free edible cookie dough!

Warm, gooey, chocolate and oatmeal GOODNESS is what this post is all about! I’m so excited to share these easy, real food, one-bowl chocolate chip cookies that are healthy enough to eat for breakfast, but rich enough to satisfy your sweet tooth after dinner.

And bonus: THEY’RE SO SIMPLE. Just 3 main ingredients — oats, banana, and almond butter. From there you can add-in whatever additional ingredients you’d like which I’ve explained in greater detail below.

This edible cookie dough recipe also makes a great ‘lactation cookies recipe’ because the ingredients support a healthy milk supply for breastfeeding mothers.

And since this is my current number one job, feeding my new baby girl, Bella; it seemed fitting to share this recipe.

Not to mention, I’ve been making double-batches of these lactation cookies weekly. I’m currently eating two of these lactation cookies a day. The nursing hunger is REAL people!

This edible cookie dough recipe is also extremely forgiving. The three main ingredients are:

  1. Ground rolled oats (also know as oat flour, see more on how to make your own oat flour below). Fun fact, did you know that all rolled oats are actually gluten-free?! But only ones that are manufactured in gluten-free facilities can be labeled as gluten-free.
  2. Mashed banana.
  3. Drippy nut butter. I personally like using almond butter for this recipe, but you can always substitute tahini or sunflower butter to make this recipe nut-free and allergy-friendly.

From there you can amp up the recipe any way you choose. My go-to additions to this healthy chocolate chip cookie recipe include:

  • Chocolate chips
  • Sea salt
  • And lactation cookie enhancing ingredients that I’ll go into more detail on below, like flaxseed and brewer’s yeast.

Similar to how I make my healthy sweet potato muffins, I always make half the batch with chocolate chips and half without.

How do you make oat flour?

You can purchase oat flour in most grocery stores, but it’s also very easy to make your own using rolled oats. Simply add your rolled oats to a high speed blender or food processor, and process until it resembles a flour like consistency!

I personally prefer a thicker ‘oat flour’ for this edible cookie dough and healthy chocolate chip cookie recipe. Therefore, I always make my own oat flour at home.

I’m not going to lie, sometimes these ‘lactation cookies’ never make it to the oven because the chocolate chip cookie dough is so delicious! There’s no raw egg or flour, so the dough is safe to eat without heating. And seriously you guys, it’s so good! You gotta try it!

You can keep the edible cookie dough in the refrigerator in a sealed container for up to one week. Alternatively, scoop into ‘cookie dough balls’, freeze individually on a baking sheet, and once solid, place into a freezer bag and store in the freezer for up to 3 months!

How to make these Healthy Cookies ‘Lactation Cookies’

Start with the base recipe listed below. These three ingredients already have ingredients to increase breastmilk supply, like:

  • Oatmeal — high in iron. Mayo Clinic recommends that new moms eat a diet rich in protein and iron to help keep up their milk supply while nursing {Mayo Clinic}. 
  • Almond Butter — full of beneficial fats and protein, which are the building blocks of proper hormone function. Plus, the monounsaturated fats in almonds, cashews and macadamia nuts can increase the richness of your milk {Parenting}.
  • Bananas — natural sweetener, and good source of vitamin B6.

But if you want to increase your breastmilk supply a little more, add in one or both of these boosters:

  • 1 Tbsp to 1/4 Cup Ground Flax Seed — Flax seed has phytoestrogens that can positively influence breast milk production. Flax seed also contains essential fatty acid {VeryWell Family}. Additionally, ground flax seed can help balance hormones during the ‘4th trimester’, or the first 3 months of your baby’s life outside the womb. After pregnancy, women experience a sudden hormone crash, which can lead to night sweats and anxiety as hormone levels struggle to get back to normal levels; flax seed helps level out these hormones and decrease side effects like night sweats. 
  • 1 Tsp to 1 Tbsp Brewer’s Yeast — a good source of B vitamins and iron which can support milk production {VeryWell Family}. Note, Brewer’s Yeast does have a stronger flavor profile that some people dislike. So I suggest starting with small additions like 1 tsp.

The easiest lactation cookies you'll ever make -- and bonus, they're so delicious, the whole family will eat these HEALTHY COOKIES. That is, if you actually get to baking the cookies without eating all the delicious edible cookie dough!

Serves: 12 cookies
Ingredients
  • 2 large ripe bananas, mashed
  • 2 cups rolled oats, ground to thick oat flour
  • 1 cup almond butter (drippy, or may substitute other nut butter or seed butter)
  • Optional: 1 Tbsp - ¼ cup ground flaxseed
  • ½ cup dark chocolate chips or cacao nibs
  • Sea Salt to taste
Instructions
  1. Preheat oven to 350 degrees F.
  2. Place rolled oats in blender or food processor and blend until oats become oat flour (I personally prefer a thicker oat flour consistency).
  3. In large mixing bowl combined mashed bananas, almond butter, and ground flax seed with oat flour, and mix well. Add in ½ cup (or more if desired) of your favorite dark chocolate chips or cacao nibs. At this time you can also add in any additional ingredients you wish as well. Mix well.
  4. Spray large baking sheet with coconut oil cooking spray.
  5. Drop large tablespoons of the cookie dough onto the baking sheet.
  6. Sprinkle with sea salt.
  7. Bake for approximately 10 minutes or until the cookies are set. You can stick a toothpick in the middle of a couple cookies to make sure they are baked through (or you can leave them a little doughy too).
  8. Remove cookies from oven, let cool, and enjoy!
Notes
Store leftovers in a sealed container or plastic bag in the refrigerator for up to a week. Alternatively, store in sealed container in the freezer for up to 3 months.

  • Ground Coffee or Expresso Beans
  • Protein Powder
  • Collagen Peptides

    Random question, do you use vital proteins collagen peptides when nursing? I bought some, but not sure if it’s recommended while nursing. Thanks!

  3. I saw your segment on TV when you made these and noticed the bag of oat flour, so I bought the oat flower today. How many cups of oat flour should I use when making these? I’m guessing you might use a little less if the oats are already made into flour? Thanks!

    • Hi Mandy! So glad you saw me on The Jason Show! Great question, I recently made these with oat flour and used 2 c oat flour to 3 bananas. So if you’re just using 2 bananas I would use 1.5 cups oat flour. Hope that helps! xo-Lindsey
