These simple, 3 ingredient cookies are the simplest cookie recipe you’ll ever see. The whole family will love these healthy cookies (and you can customize them in a variety of ways). But as a bonus, the three main ingredients are perfect in supporting breastfeeding moms, making these great lactation cookies, too!

Healthy Edible Cookie Dough

These simple, 3 ingredient cookies are healthy enough to eat for breakfast, but rich enough to satisfy your sweet tooth after dinner.

With just 3 main ingredients (oats, banana, and almond butter), they’re the easiest cookie you can make! From there, you can customize this recipe by adding in whichever additional ingredients you’d like which (I’ve noted some options for you in this post!).

Sometimes, these delicious cookies never even make it to the oven because the dough is so delicious. There’s no raw egg or flour, so the dough is safe to eat without heating.

And as an added bonus, this edible cookie dough recipe also makes a great lactation cookie recipe because the ingredients support a healthy milk supply for breastfeeding mothers!

That said, this edible cookie dough recipe is one the whole family will enjoy — straight out of the bowl or fresh out of the oven.

Description

The easiest cookies you’ll ever make! These cookies have ingredients that are perfect for supporting breastfeeding moms, but they’re so delicious, the whole family will enjoy them as well!


Ingredients

Scale
  • 2 large ripe bananas, mashed
  • 2 cups rolled oats, ground to thick oat flour
  • 1 cup almond butter (drippy, or may substitute other nut butter or seed butter)
  • Optional: 1 tbsp – 1/4 cup ground flaxseed
  • Optional: 1 tsp – 1 tbsp of brewer’s yeast
  • Optional: 1/2 cup dark chocolate chips or cacao nibs
  • Optional: sea salt to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. Place rolled oats in blender or food processor and blend until oats become oat flour (I personally prefer a thicker oat flour consistency).
  3. In a large mixing bowl, combine mashed bananas, almond butter, and ground flax seed with oat flour, and mix well.
  4. Add in 1/2 cup of your favorite dark chocolate chips or cacao nibs and mix well.
  5. Spray large baking sheet with coconut oil cooking spray.
  6. Drop large tablespoons of the cookie dough onto the baking sheet.
  7. Sprinkle with sea salt.
  8. Bake for approximately 10 minutes or until the cookies are set. You can stick a toothpick in the middle of a couple cookies to make sure they are baked through (or you can leave them a little doughy too).
  9. Remove cookies from oven, let cool, and enjoy!

Notes

*Store leftovers in a sealed container or plastic bag in the refrigerator for up to a week. Alternatively, store in a sealed container in the freezer for up to 3 months.
** To further support breastmilk production, add ground flax seed and brewer’s yeast. Brewer’s yeast does have a stronger flavor profile that some people dislike, so I suggest starting with a small addition (1 tsp).

Can I Add Protein Powder To This Recipe?

Yes! These cookies can be customized in a variety of ways. If you’d like to make this a high-protein snack or treat, I would add one scoop of your favorite protein powder per batch (or per one dozen cookies).

How Do You Make Oat Flour?

You can purchase oat flour in most grocery stores, but it’s also very easy to make your own using rolled oats. Simply add your rolled oats to a high speed blender or food processor, and process until it resembles a flour like consistency!

What Makes These Lactation Cookies?

The main ingredients in these cookies (oats, almond butter and banana) are great for breastfeeding moms. If you want to increase your breastmilk supply a little more, add in ground flax seed and/or brewer’s yeast. Ground flax seed contains phytoestrogens which can positively influence breast milk production and can help balance hormones during the postpartum period. Brewer’s yeast is a good source of B vitamins and iron which can support milk production (VeryWell Family).

You can customize these cookies however you like by adding in any of the following ingredients:

  • Raisins or Dried Fruit

    • Jess! So glad you loved the lactation cookies — so easy + SO GOOD! And I currently use Primal Kitchen Collagen Peptides while nursing. Of course I have to say check with your doc or midwife, but I personally did use Vital Proteins while nursing Brody. I hope that helps! -Lindsey

  3. I saw your segment on TV when you made these and noticed the bag of oat flour, so I bought the oat flower today. How many cups of oat flour should I use when making these? I’m guessing you might use a little less if the oats are already made into flour? Thanks!

    • Hi Mandy! So glad you saw me on The Jason Show! Great question, I recently made these with oat flour and used 2 c oat flour to 3 bananas. So if you’re just using 2 bananas I would use 1.5 cups oat flour. Hope that helps! xo-Lindsey
