Where are my avocado lovers at?! I know there’s a lot of you out there because over half of you who sign up for my email newsletter and reply to my initial email tell me that your favorite food is avocados.
And let me tell you my love for avocados has only grown significantly deeper throughout pregnancy. The first trimester of my pregnancy I pretty much lived off the Avocado Toast + Egg recipe below. And throughout the second and third trimester I’ve been loving the avocado tortilla + egg scramble. Although I love all these recipes and would eat them for breakfast, lunch, snack or dinner any day of the week!
So when Twin Cities Live asked me to come on air and share some of my favorite breakfast recipes, I thought, ‘why haven’t I shared these on the blog yet?!’ So this week you are getting a two for one — I’m sharing my 5 favorite, easy and healthy avocado breakfast recipes on the blog and I’ll be on Twin Cities Live this Thursday, January 12th, sharing some of these recipes and all my tips + tricks for eating a healthy, well-rounded breakfast.
5 easy and healthy avocado breakfast recipes you can make in 5-minutes with 5 ingredients or less; say good morning to your new breakfast staples!
A classic staple breakfast or mid-day snack. Also great for pairing with a bowl of warm veggie soup for lunch. I personally prefer my avocado toast over a Food For Life Baking Ezekiel Sprouted Grain English Muffin.

Take that avocado toast recipe from above and top it with a runny egg! I pretty much lived off avocado toast + over-easy egg throughout the first trimester of my pregnancy. Again I personally prefer my avocado toast + egg over a Food For Life Baking Ezekiel Sprouted Grain English Muffin.

Ah, the classic breakfast burrito. When I’m in a pinch and in need of a quick snack, I’ll often just mash 1/2 an avocado into a corn tortilla. Viola! That’s it. But if you want to get fancy you can add some scrambled eggs and veggies of choice making this a true gourmet meal in 5 minutes or less!

Now we are getting real fancy — avocado boats! You can make these the hard way by baking the egg into the avocado, or you can do it the 5-minute, easy way by simply topping your avocado with an egg cooked to your liking {I prefer over-easy}. But in my opinion what really makes this avocado boat is the Pesto + Quinoa topping from Trader Joe’s. Seriously friends, if you live near a Trader Joe’s you need to pick up a jar of this Pesto + Quinoa — it will change the way you eat eggs and salads forever.

And finally, the ultimate grab-n-go breakfast! When I’m really in a pinch and need to get out the door I grab two hard boiled eggs out of the fridge, an avocado, a knife and I jet out the door. Of course this breakfast requires that you pre-prep some hard-boiled eggs which I highly recommend as they are a great, high-protein snack to always have on hand.
