One of my greatest fears is failure. My type A, perfectionist personality has always made me subject to greatly fearing falling flat on my face and failing.
But if there’s anything I’ve learned in starting my own business, it’s that sometimes the greatest lessons or next best business idea come from failing. I guess it’s what they call ‘failing forward.’ And although it’s not always the most exhilarating process to go through you typically come out better for it.
Or in this case you come out with a delicious bowl of protein packed chocolate mousse!
I initially set out to make a delicious, fluffy coconut cream, chocolate mousse. I was super excited about the recipe until it came out as a sad, runny, chocolate mess ???.
Fortunately, team Fit Foodie Finds was working from my house when I was making this recipe so Lee and Linley came to the rescue. Together we turned this recipe fail into a total success!
An easy, 4-ingredient chocolate mousse packed with collagen protein. No heating, no fuss. Just a bit of chilling and whipping for a delicious and healthy treat.
Ingredients
Scale
1 can full fat coconut milk (refrigerated for 8 or more hours)
2–4 tbsp raw cacao powder (depending on your level of preferred chocolatey-ness)
2 scoops vital proteins collagen peptides
2 tsp cinnamon
optional: 1/2 c fresh berries for topping
Instructions
Place the can of coconut milk in the refrigerator for at least 8 hours (or overnight). This will cause the cream to separate from the milk. open the can of coconut milk from the bottom and scrape out the cream into a medium sized mixing bowl. (You can save the milk and use it for smoothies.)
Add the raw cacao powder, collagen peptides and cinnamon to the coconut cream.
Whip the mixture with a hand mixer or KitchenAid mixer for 5-8 minutes.
Place the bowl in the fridge until ready to serve (let set in fridge for at least 20 minutes, but mixture gets even more thick and creamy if you let it set overnight).
Place in serving bowls, top with berries and enjoy!

What Is The Difference Between Chocolate Pudding And Chocolate Mousse?
The ingredients for mousse and pudding are similar. Chocolate pudding is typically cooked on the stovetop while mousse is not cooked. Mousse develops its airy texture from whipped cream or milk.
4-Ingredient Chocolate Mousse Recipe
I started by just using refrigerated canned coconut milk; using just the thicker cream that separated from the milk in the fridge. I whipped that well but when I didn’t the thick and creamy consistency I was striving for I decided to add raw cacao powder to thicken it up.
When that didn’t do the trick I opted to add a couple scoops of vital proteins collagen peptides to the mix. I’m kind of obsessed with adding vital proteins collagen to my daily eats and drinks to increase my protein intake. In my recent segment on Twin Cities Live I shared my lemon, ginger + collagen tea that I use as an early morning pre-workout.
Anyways it turns out all I really needed to do is let the coconut cream mixture set in the fridge for a bit to thicken up. But by adding the raw cacao, collagen, and pinch of cinnamon I turned this once boring runny coconut cream mixture into a luscious whipped chocolate mousse packed with collagen protein!
Enjoy it straight from the bowl, top it with some berries, or use it as a fluffy, chocolate cream filling. I have some other ideas brewing too, like making overnight oats with it {but I’ll save that for another recipe}.
So easy. so delicious. so light. and so fluffy. Let’s just say I will definitely be making this 4-Ingredient Chocolate Mousse again!
