A delicious, fresh salad full of good-for-you ingredients like blueberries, kale and quinoa. My favorite lunch meal prep or side dish to bring to any gathering.
As a busy mom of three, I love to meal prep breakfast, high protein snacks and lunches with highly nutritious foods that offer numerous health benefits.
Whether your lunch is in need of a serious makeover, or if you just need a little ‘back-to-school’ lunch inspiration this fast, fresh and filling quinoa salad is one of my favorites.
I recommend making a large batch for the week (the recipe below makes 5-6 servings) and I divide 1-2 cups of the salad it into into mason jars for the perfect lunch or snack.
My go-to fresh, fast and filling make ahead cold lunch salad.
Ingredients
Scale
2 c cooked quinoa, cooled
1 c fresh blueberries
2 c kale, shredded
½ c raw almonds, sliced
salt and pepper to taste
mint leaves to taste, chopped (10-20 leaves)
optional: ¾ c goat cheese or feta cheese crumbles
optional: 1 avocado, sliced
1–2 lemons (juice of 1–2 lemons)
4–6 tbsp extra virgin olive oil
Instructions
In a large bowl combine quinoa, blueberries, kale, almonds, mint leaves and optional goat or feta cheese and avocado.
Mix until well combined.
Add olive oil and lemon juice and toss to fully coat.
Season with salt and fresh ground pepper to taste.
