My Lunchbox Love {blueberry, kale, quinoa salad}

Chipotle, Noodles, Panera…i’m guessing all these lunch options sound a lot more appetizing than the repetitive turkey sandwich or lunch wrap in your brown paper bag?

Whether your lunch bag is in need of a serious makeover, or if you just need a little ‘back-to-school’ lunch inspiration this fast, fresh and filling quinoa salad is one of my lunchbox loves! And go ahead, polish off a big bowl of this delicious salad with a big smile on your face knowing your saving on cash from dinning out {not to mention avoiding the loads of sneaky sugars those lunch hot-spots add to their salad dressings}.

I highly recommend making a large batch for the week {the recipe below will make 5-6 servings} and dividing it into mason jars for the perfect lunch {1-2 cups} or snack {1/2-1 cup}.

ps – this is my favorite #meatlessmonday meal.

my go-to fresh, fast and filling make ahead cold lunch salad.

Serves: 6
Ingredients
  • ingredients for salad:
  • 2 c cooked quinoa, cooled
  • 1 c fresh blueberries
  • 2 c kale, shredded
  • ½ c raw almonds, sliced
  • salt and pepper to taste
  • mint leaves to taste, chopped {10-20 leaves}
  • optional: ¾ c goat cheese or feta cheese crumbles
  • optional: 1 avocado, sliced
  • ingredients for dressing:
  • 1-2 lemons {juice of 1-2 lemons}
  • 4-6 tbsp extra virgin olive oil
Instructions
  1. in a large bowl combine quinoa, blueberries, kale, almonds, mint leaves and optional goat or feta cheese and avocado.
  2. mix until well combined.
  3. add olive oil and lemon juice and toss to fully coat.
  4. season with salt and fresh ground pepper to taste.
Notes
