I’m always looking for ways to start my morning with plenty of protein and produce because I’ve noticed such a difference in my energy when I do. If I build my breakfast around protein and fiber, I feel full for longer, my focus is better and I don’t get that mid-morning crash. That’s exactly why I love this easy breakfast. This savory breakfast bowl checks all the boxes while still tasting so good.

This recipe combines some of my favorite nutrient-dense staples: roasted sweet potatoes for fiber and complex carbohydrates, turkey sausage for a lean protein boost, creamy avocado for healthy fats, sautéed greens for iron and vitamins and, of course, eggs for extra protein. Altogether, it makes a balanced bowl that feels hearty and satisfying without being heavy.

What I really love about this recipe is its versatility. I’ll often meal prep a batch of roasted sweet potatoes and cooked sausage ahead of time, then just reheat and add fresh toppings during the week. I’ll store my leftovers in an airtight container for shorter prep time and easier mornings. You can also mix up the ingredients! Try swapping the turkey sausage for chicken sausage, using spinach or kale as your greens or even topping it with salsa or hot sauce if you like a little kick.

Absolutely, this sweet potato bowl is a healthy breakfast option. I love starting my day with a bowl like this one because it’s such a well-rounded option. Sweet potatoes give you complex carbs and fiber for steady energy, while the eggs, turkey sausage and avocado add protein and healthy fats. The balance of nutrients helps keep me full, supports digestion and fuels my morning without the crash I sometimes feel from more carb-heavy breakfasts.

Is this a good high-protein breakfast to have before a workout?

Yes, this bowl is a great high-protein breakfast before a workout. I have found that the combination of protein from the sausage and eggs, plus the complex carbs from the sweet potato, gives me the right balance of fuel for my workouts. I typically eat a larger meal like this an hour before my workout to give myself plenty of time to digest. If I work out first thing in the morning, I’ll have something lighter like half a protein bar or an egg bite. But overall, this is one of my favorite protein-packed options to power through a workout.

Eggs

Eggs are such a nutrient powerhouse – I love eggs for breakfast. They provide high-quality protein along with essential vitamins and minerals like choline (which is important for brain health), B vitamins and selenium. They also contain antioxidants like lutein and zeaxanthin, which support eye health. When I buy eggs, I usually reach for cage-free, pasture-raised or organic when possible, since they tend to have higher levels of omega-3 fatty acids and vitamin D compared to conventional eggs. I include eggs in this bowl because they not only boost the protein content but also tie the whole dish together with their rich flavor and versatility.

Turkey Sausage

I like using Jones Dairy Farm turkey sausage (or chicken sausage!) in this bowl because it’s a lean source of protein that helps build and repair muscles and keeps me satisfied. Turkey sausage is a bit lighter than traditional pork sausage, but still adds that savory flavor I love. Protein at breakfast is especially important for balancing hunger hormones and supporting energy levels throughout the day.

Sweet Potatoes

Sweet potatoes are one of my favorite ingredients to use in breakfast bowls because they’re naturally sweet, filling and nutrient-dense. They’re packed with fiber, which supports digestion and helps keep blood sugar levels stable. They’re also a great source of beta-carotene, which supports eye health and immunity. Sweet potatoes also provide complex carbohydrates that give me steady, long-lasting energy.

Greens

Leafy greens are rich in iron, vitamin K and antioxidants. I always like to sneak some greens into my breakfast because it’s such an easy way to get an extra serving of vegetables first thing in the day. They also bring anti-inflammatory properties to the bowl. You can use spinach, kale or any leafy greens you love!

Avocado

Avocado provides healthy monounsaturated fats, which support heart health and help the body absorb fat-soluble vitamins (like vitamins A, D, E and K). It also adds fiber and potassium, plus the creamy texture of avocado balances the savory flavors in this bowl. Healthy fats also slow digestion just enough to keep me feeling satisfied longer.

Coconut Oil or Olive Oil

I like to use a little healthy fat when roasting my sweet potatoes or sautéing the greens. Coconut oil, avocado oil or olive oil all work well in this recipe. Each has its own unique nutritional benefits, and which one you choose really comes down to your preferences and what you’re looking for nutritionally.

Red Onion

I love adding red onion to my sweet potato breakfast bowl because it brings good flavor. Red onions are packed with antioxidants, particularly quercetin, which has anti-inflammatory properties and supports heart health. They also contain vitamin C, which helps support the immune system, and small amounts of fiber to aid digestion.

Red Pepper

Red bell peppers add a pop of color, crunch and a naturally sweet flavor that complements the savory ingredients in this bowl. Nutritionally, red peppers are a powerhouse. They’re loaded with vitamin C, which supports immunity and helps the body absorb iron from the greens and sweet potatoes. They also contain vitamin A in the form of beta-carotene, antioxidants and anti-inflammatory compounds that support overall health.

Description

This savory egg bake bowl has everything you need – quality protein, healthy fats and fiber. It’s versatile and makes for a delicious meal prep breakfast.


Ingredients

Scale
  • 12 organic, cage-free or pasture-raised eggs (prepared to taste)
  • 24 turkey sausage links
  • 1/2 c cooked sweet potatoes, cubed
  • 2 c greens
  • 1/2 red pepper, chopped
  • 1/4 c red onion, chopped
  • 1/4 avocado, sliced
  • 2 tbsp coconut oil or extra virgin olive oil
  • Salt and pepper to taste
  • Optional: 1-2 tbsp hot sauce


Instructions

  1. Heat a medium-to-large pan on the stove with 1 tbsp coconut oil or extra virgin olive oil (I prefer coconut oil as it heats well and adds a little sweetness to the sweet potatoes).
  2. Sautè the cubed sweet potatoes over medium-high heat until they are golden around the edges (about 10 minutes). Season your sweet potatoes however you like – with salt, black pepper, garlic powder or a teaspoon cinnamon
  3. Set the sweet potatoes aside or continue to cook, depending on your preference. In the same pan, cook your turkey sausage according to the package instructions. 
  4. Once the turkey sausage is browned, add the red pepper, red onion and greens to your pan. Sautè for 2-3 minutes.
  5. Fry 1-2 eggs on the stove. I like to cook my eggs in about 1 tbsp of coconut oil, and I cook to over easy. You can prepare your egg(s) to your personal preference, or use hard boiled eggs if you’ve prepped the other ingredients ahead of time.
  6. Transfer all ingredients into a bowl and top with your egg(s). Season with salt, pepper and add in your optional hot sauce and enjoy!

Notes

If you don’t have turkey sausage, you can certainly use ground turkey seasoned with salt and pepper. You can also substitute chicken sausage in this recipe. 

You can also roast your sweet potatoes on a baking sheet in the oven. Preheat your oven to 400°F and cook for 30-45 minutes. Cook time will vary based on your preference.

These sweet potato bowls are very versatile – anything goes well with them! You can swap out the protein sources if you’d like. I like to do chicken sausage, but bacon goes well in this, too. If you’re plant-based, load up on veggies and use a protein source like black beans or tofu. I’ve also added sautéed mushrooms to the veggies. If I want a heartier breakfast, I’ll add a small scoop of cooked quinoa or farro for extra fiber and protein. You can add maple syrup, salsa or fresh herbs (like cilantro) for different flavor profiles. Add a side of fresh fruit for a well-balanced meal!
