This savory sweet potato, turkey sausage egg bake bowl has everything you need — quality protein, healthy fats and fiber. It’s versatile and makes for a delicious meal prep breakfast.
I strive to get protein and produce at every meal, and have found that I have better energy when I start my day with a protein-packed, fiber-rich breakfast.
This breakfast is a well-balanced bowl, rich in iron and fiber packed with sweet potato, avocado, turkey sausage, greens, and eggs. When you prioritize protein and fiber at breakfast, you’ll notice improved energy and that you stay full for longer periods of time.
This savory sweet potato, turkey sausage egg bake bowl has everything you need — quality protein, healthy fats and fiber. It’s versatile and makes for a delicious meal prep breakfast.
Ingredients
Scale
1–2 organic, cage-free eggs (prepared to taste)
2–4 oz turkey sausage, nitrate-free (equivalent to 1 sausage patty)
1/2 c cooked sweet potatoes, cubed
2 c greens
1/2 red pepper, chopped
1/4 c red onion, chopped
1/4 avocado, sliced
2 tbsp coconut oil or extra virgin olive oil
salt and pepper to taste
optional: 1-2 tbsp hot sauce
Instructions
Heat a medium-to-large pan on the stove with 1 tbsp coconut oil or extra virgin olive oil (I prefer coconut oil as it heats well and adds a little sweetness to the sweet potatoes).
Sautè the cubed sweet potatoes in the large pan until they start to golden around the corners. about 10 minutes.
When finished with the sweet potatoes, in the same pan brown the turkey sausage (ground or patty that you can divide into smaller pieces). Note: if you don’t have turkey sausage you can always use 4 oz. ground turkey and season with a little salt and pepper to taste.
Once the turkey sausage is browned, in the same pan sautè the red pepper, red onion and greens. sautè for 2-3 minutes.
The final step is to fry an 1-2 eggs over the stove. i like to cook my eggs in 1 tbsp coconut oil, over easy, but you can prepare your egg(s) to your personal preference.
Place all ingredients into a bowl — greens, veggies, sweet potato and turkey sausage and top with egg(s). Add salt, pepper, and optional hot sauce and enjoy!

*Gluten free, dairy free, soy free, and nut-free. **If you don’t have turkey sausage you can always just season ground turkey. ***I like to prep a large batch of cubed sweet potatoes and turkey sausage at the beginning of the week. That way if i’m in a time pinch all I need to do is sauté the greens, peppers and onions and fry an egg while I re-heat the cubed sweet potatoes and turkey sausage. Just like that you can turn this 20-to-30 minute meal into a 5-to-10 minute meal.

Can I Meal Prep An Egg Bake Bowl?
Egg bake bowls are a great addition to your weekly meal prep. I prep a large batch of cubed sweet potatoes and turkey sausage, then all I need to do is sauté the greens, peppers and onions and fry an egg while I re-heat the sweet potatoes and turkey sausage. I use Caraway Cookware for this recipe (the egg bake doesn’t stick to these pans!)
