Lemon Chicken With Garlic Roasted Veggies {30 minute meal series}

Introducing the 30 minute meal series, because who doesn’t love an easy, healthy, weeknight dinner you can whip up in 30 minutes or less?! I’m so excited to be partnering with the dietitians, Stacie and Jess, over at The Real Food RDs on this new series.

So here’s how it’s going to work, once a month we will be bringing you a two-part meal you can dish up in 30 minutes or less. You will find one part of the meal and recipe here on my blog, and the second part of the dish and recipe on The Real Food RDs’s page. 

This week we are featuring a lemon chicken and garlic roasted veggies dinner for two. I’m featuring the lemon chicken recipe below, and you can get the garlic roasted veggies recipe here.

And what better week to kick off this 30 minute meal series than valentine’s week! Dinner for two in less than 30 minutes. That has date night written all over it. So whether your cooking up dinner for you and your loved one this weekend, or you have a goal to have more home-cooked dinner dates, you’re going to love this 30 minute meal series!

So let’s jump into my part of the recipe, lemon chicken. Most everyone has a standard method for cooking chicken, and this is the one I use most often.

I love the way the lemon adds a fresh zest to chicken; it plays perfectly with a little black pepper and in this case capers. Wait capers, what are those? Small, edible flower buds {but wait read on, see why these flavorful buds pair perfectly with this dish}. Capers add a burst of flavor to this dish, a lemony, olive-y flavor. Although they do have a bit of a green olive flavor, don’t rule them out if you don’t like green olives. My husband hates green olives, and without telling him what capers were I just said give them a try. And he didn’t hate them {to be honest he didn’t love them, but said a couple were good to add some flavor}.

All it takes is 5-7 ingredients, which you probably have at home right now {minus the capers, you may have to purchase those}, to pull together the main dish of this 30 minute meal. If you need to purchase capers, they’re not a specialty item, so you should be able to find them at most grocers. I get mine at Trader Joe’s.

And while you tend to the chicken on the stove you can roast your chopped veggies in the oven. About 20 minutes later you have a perfectly balanced and flavorful dinner for two. It doesn’t get much easier {or more delicious} than that.

 20 minutes
servings: 3-4 servings {one 6oz. chicken breast per serving}

 

lemon chicken with capers ingredients: 

  • 1 lb boneless skinless chicken breasts {2-4 chicken breasts}
  • 1 1/2 c chicken broth
  • 1 large lemon {1/2 for fresh juice and 1/2 thinly sliced}
  • 1/4 c jarred capers
  • 1-2 cloves garlic, finely chopped
  • 2 tbsp extra virgin olive oil
  • black pepper and sea salt to taste
  • fresh chives, finely chopped
  • optional: 1/4-1/2 c white wine

directions:

  1. pending the size of your chicken breasts you may want to cut the breasts in half so you have a total of 3-4 pieces.
  2. heat 2 tbsp of olive oil in a large, heavy skillet on the oven over medium heat.
  3. place the chicken breasts in the skillet/pan and add chicken broth, fresh lemon juice {1/2 of lemon}, garlic, salt and pepper to taste.
  4. you can also top each chicken breast with a thin lemon slice at this time if you want the lemon slice to bake in with this chicken {or you can add as a garnish once the chicken is cooked through}.
  5. cover pan and let chicken cook for 8-10 minutes.
  6. then turn the chicken breasts and add the optional white wine and capers to the pan.
  7. cover and let cook for an additional 5-8 minutes, depending on the size of your chicken breasts.
  8. once you chicken breasts are golden brown and cooked through, remove from pan and top with lemon slice, capers from the pan and fresh chives.
  9. serve with garlic roasted veggies and enjoy!
  10. store leftovers in the fridge for 2-3 days.

    • Yes yummy, delicious, fresh meal in less than 30 minutes is my style! I cook the chicken on the stove over medium heat for this recipe! Enjoy!
