savory sweet potato, turkey sausage, & egg bowl {30 minute meal series}

forget oatmeal, this savory sweet potato, turkey sausage, and egg bowl has you covered for breakfast, lunch or dinner!
Ingredients
  • 1-2 organic, cage-free eggs {prepared to taste}
  • 2-4 oz turkey sausage, nitrate-free {equivalent to 1 sausage patty}
  • ½ c cooked sweet potatoes, cubed
  • 2 c greens
  • ½ red pepper, chopped
  • ¼ c red onion, chopped
  • ¼ avocado, sliced
  • 2 tbsp coconut oil or extra virgin olive oil
  • salt and pepper to taste
  • optional: 1-2 tbsp hot sauce
Instructions
  1. heat a medium-to-large pan on the stove with 1 tbsp coconut oil or extra virgin olive oil {i prefer coconut oil as it heats well and adds a little sweetness to the sweet potatoes}.
  2. sautè the cubed sweet potatoes in the large pan until they start to golden around the corners. about 10 minutes.
  3. when finished with the sweet potatoes, in the same pan brown the turkey sausage {ground or patty that you can divide into smaller pieces}. note if you don't have turkey sausage you can always use 4 oz. ground turkey and season with a little salt and pepper to taste.
  4. Once the turkey sausage is browned, in the same pan sautè the red pepper, red onion and greens. sautè for 2-3 minutes.
  5. the final step is to fry an 1-2 eggs over the stove. i like to cook my eggs in 1 tbsp coconut oil, over easy, but you can prepare your egg{s} to your personal preference.
  6. Place all ingredients into a bowl -- greens, veggies, sweet potato and turkey sausage and top with egg{s}. Add salt, pepper, and optional hot sauce and enjoy!

*gluten free, dairy free, soy free, and nut-free.
**if you don't have turkey sausage you can always just season ground turkey.
***I like to prep a large batch of cubed sweet potatoes and turkey sausage at the beginning of the week. That way if i'm in a time pinch all I need to do is sauté the greens, peppers and onions and fry an egg while I re-heat the cubed sweet potatoes and turkey sausage. Just like that you can turn this 20-to-30 minute meal into a 5-to-10 minute meal.
