Meal prep isn’t anything new around here — I’ve talked about the reasons I love this time-saving practice over and over again, especially since becoming a mom!

I think lunches and dinners tend to hog the spotlight when it comes to meal prep, because so many people are used to the routine of packing lunches to bring to school or work. It seems less intuitive to spend time batch-cooking a meal that most people tend to eat at home. 

But I’m here to tell you, breakfast meal prep has changed my weekday morning routine for the better! And for me it’s become an essential part of becoming a morning person.

I’m a early riser and I pretty much live off pre-prepped baked egg cups {full recipe details below} with a slice of avocado toast. Simplifying this part of my morning routine has allowed me to create more time for my morning Bible study and devotionals before I head out the door for my morning workout.

I take 2 baked eggs, slice them in half, and enjoy on a slice of avocado toast each morning with a cup of this detox tea.

The Recipe: Baked Egg Cups

Baked egg cups are basically hard boiled eggs without the hassle and mess of peeling egg shells. These baked egg cups make an easy, on-the-go, protein-packed meal or side.

Serves: 6 servings
Ingredients
  • 12 Large Organic Cage-Free Eggs
  • Optional coconut oil spray for muffin pan
Instructions
  1. Preheat oven to 350 degrees.
  2. If using a standard muffin tin, spray each cup with a generous amount of spray coconut oil, or cooking oil of choice. I personally prefer to use a non-stick, silicon muffin pan to avoid losing half the egg to the pan. And it makes for an easier clean up.
  3. Crack eggs into muffin tin/pan, one egg per muffin cup.
  4. Bake at 350 for 28-30 minute, if you prefer a soft-boiled egg you can play around with this timeframe. I've personally found 28 minute to be the sweet spot in my oven.
  5. Avoid over-cooking the eggs, as they will get a hard, filmy layer across the top.
  6. Remove from oven, let cool and store in a glass container in the fridge.

*I make 12 baked egg cups on Sunday, store in the fridge, and eat within 7 days.
