There’s something about rolling out of bed to a warm, hearty breakfast {especially during these snowy, cold winter months in Minnesota}. And although I love my warm bowls of oatmeal, sometimes it’s nice to mix things up.
Enter this delicious, comforting and simple sweet potato breakfast bowl; a great grain-free alternative to oatmeal. Of course, it’s Whole30 and Paleo friendly too. I don’t know how paleo people live without oats, but this power sweet potato breakfast bowl is the next best thing.
And this simple sweet potato breakfast bowl is meal prep friendly. So don’t be discouraged by the 35 minute cook time on this recipe. Yes, sweet potatoes do take some time to cook in the oven, but if you cook them ahead of time you can turn this into an easy-peasy, 5-minute recipe.
It’s simple because it’s only 5 ingredients — sweet potato, banana {which you can easily omit if you’re following a strict Whole30}, cinnamon, collagen protein {I prefer Vital Proteins Collagen Peptides} and a splash of almond milk. Simple.
