Description

With only 5 ingredients and 10 minutes of meal prep time, these fruit and veggie-loaded zucchini apple fritters are an easy breakfast or snack the entire family can enjoy!


Ingredients

Scale
  • 1 Medium Zucchini
  • 1 Apple (pink lady and gala are my favorite)
  • 2 tsp Ground Cinnamon
  • 1 Whole Egg
  • ¼ cup Almond Flour

Instructions

  1. Preheat the oven to 350 degrees.
  2. Using a food processor with the grating attachment, grate zucchini. Remove grated zucchini and place in a doubled paper towel (or use a clean cloth), squeeze excess water out. Place in a medium bowl.
  3. Peel apple and cut into four large pieces, removing the core. Using the food processor again, grate the apple. Add grated apple to the zucchini in the bowl.
  4. Add the cinnamon, egg, and almond flour. Stir mixture thoroughly.
  5. Line a baking sheet with parchment paper. Make 6 round even fritters. Bake for 20-25 minutes or until golden brown on the edges and cooked through. Remove from the oven. Let cool before moving them.

Notes

*Store leftovers in the fridge in an airtight container. Place parchment paper between stacks of fritters.

When we make a batch of Zucchini Apple Fritters, they don’t last long in our house. The kids pace the kitchen waiting for them to cool just enough to start eating. I have four boys (Oliver 9, Gus 7, Henry 5 + Walton almost 2) and the fritters are loved by all of them.

Actually when I made them for this guest post, I had to make 3 batches! The first batch was eaten before I could photograph them!

They were a great snack for the kids that day. And I love serving them as they are a very healthy and protein packed snack that will keep them full and help maintain energy levels.

So often a snack is just carb-filled or full of sugar and artificial this and that. Yes, it does take more time to prepare snacks instead of grabbing a box of pre-made snacks from the store, but as I’m in the kitchen making them, I feel grateful that I can make these options and I know deep down in my mama heart, it’s the right choice for us.

What Is An Apple Fritter Made Of?

A traditional apple fritter is a batter-based, deep-fried pastry made with flour, eggs, sugar, cinnamon, apples and a few other basic pastry ingredients. This version of an apple fritter provides a sneaky way to get some veggies in, uses fewer ingredients, and offers a lighter alternative!

Can You Substitute Coconut Flour For The Almond Flour?

Yes, you can substitute any other type of flour for the almond flour in this recipe. Just be sure to squeeze the water from the shredded zucchini using a cloth before you mix to avoid soggy fritters.

Storage And Reheating

Fresh from the oven is of course our favorite way to eat them, but if you’re a plan-ahead mama and make them on the weekend for your #SundayMealPrep they’re still great! To store them, I’ve found layering them in an airtight container with parchment paper between the layers to be the best.  

If you skip the parchment paper between the stacked fritters, they will stick to each other. Yeah, nobody wants to eat stuck-together fritters. So parchment paper is your friend here! Pop them into the fridge and they’ll keep for 3-4 days. To warm them up again, place them on a parchment lined baking sheet and bake for 5-8 minutes in a 350 degree oven. Not only will your house smell of warm cinnamon again, the fritters will crisp up again on the edges.
