Holiday party season is officially here! If your calendar looks anything like mine your nights and weekends are filling up with scarf exchanges, work and friend get-togethers, and of course, a holiday hustle sweat session to keep things in balance.

Naturally all of the above revolve around socializing and sharing holiday drinks, eats and treats. Enter your request to bring a heavy appetizer to share. I don’t know about you, but I could live off heavy appetizers. Give me a good meat and cheese board, roasted Brussels Sprouts, turkey meatballs, and these herb roasted mushroom and goat cheese crostini’s and I’ll call that dinner any night of the week.

And since I’ve brought it up, I totally recognize that not everyone loves mushrooms, but some people {me} love them! And I firmly believe there should be at least one mushroom appetizer at every holiday party. Plus, if no one else wants my mushroom appetizers {like my husband who despises them} well more mushroom crostini’s for me.

Simply slice and bake your baguette, sear mushrooms and arugula with fresh herbs, and whip goat cheese with a little lemon and more fresh herbs. Then assemble into these savory little bites that your fellow mushroom-lovering friends will be drooling over.

Ingredients
  • 1 French Baguette or gluten free bread of choice {sliced into 16 pieces}
  • 4 Tbsp Extra Virgin Olive Oil
  • ¾ c Crimini Mushrooms, chopped
  • 1 c Arugula
  • 4 Cloves Garlic, finely chopped
  • 4 oz Goat Cheese
  • 1 tbsp Fresh Squeezed Lemon Juice
  • ¼ c Mixed Herbs: Fresh Rosemary, Chives, Thyme and Sage {or herbs of choice}, finely chopped
  • Sea Salt and Fresh Ground Pepper
Instructions
  1. Preheat oven to 350 and line a sheet pan with parchment paper.
  2. Slice baguette and brush slices with olive oil mixed with salt, pepper and 1 clove chopped garlic. Bake for 15-20 minutes or until baguette slices are golden brown. Set aside.
  3. In a large nonstick pan, heat 1 tbsp olive oil on medium heat. Add mushrooms and sear without stirring for 3 minutes. Then reduce heat and add arugula, remaining garlic and 2-3 tbsp fresh herbs; stir well for approximately 5 minutes. Set aside to cool.
  4. In a bowl, food processor, or Kitchenaid whip the goat cheese with 1-2 tbsp fresh herbs and lemon juice. Whip until creamy and smooth.
  5. Spread whipped goat cheese on the crostini, top with a spoonful of mushrooms, arugula, herbs, and a pinch of sea salt. Serve and enjoy!
