more healthy pumpkin recipes please! since i posted my pumpkin oat ball recipe the requests have come in for more healthy, pumpkin-ifying recipes.

pumpkin is full of nutrients — like vitamin C and fiber and it’s an excellent source of vitamin A — so i understand why you’re craving more of it.

so here’s my take on a pumpkin spice green smoothie; pumpkin + spinach never tasted so good {full recipe below}.

you can dress this one down with fewer ingredients, keeping out the optional sweetener and fruit additions, {this is how i prefer it — pictured above} and rely on the clean, slightly sweet taste of pumpkin puree.

clean and simple pumpkin spice green smoothie ingredients:

  • ½ – ¾ c almond milk {depending on thickness you desire}
  • ½ c pure pumpkin puree
  • 1-2 c spinach 
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tbsp ground flax seeds
  • ice

or you can dress it up to make it taste more like pumpkin spice dessert bowl {pictured below}.

  • ½ – ¾ c almond milk {depending on thickness you desire}
  • ½ c pure pumpkin puree
  • 1-2 c spinach 
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tbsp ground flax seeds
  • ½ – 1 ripe banana, diced {frozen}
  • ¼-½ avocado or 1 tbsp nut butter

  • 2-4 oz plain yogurt or greek yogurt
  • ¼ c old fashioned rolled oats
  • 1 tbsp nut butter or sprinkle of nuts
  • drizzle of raw honey
  • sprinkle of unsweetened coconut flakes
  • sprinkle of cocoa nibs or dark chocolate chips

Ingredients
  • Green Smoothie Ingredients:
  • ½ - ¾ c almond milk {depending on thickness you desire}
  • ½ c pure pumpkin puree
  • 1-2 c spinach
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tbsp ground flax seeds
  • ice
  • Optional Ingredients:
  • ½ - 1 ripe banana, diced {frozen}
  • ¼-½ avocado or 1 tbsp nut butter
  • 1 scoop whey, hemp or vegan protein of choice
  • Optional Smoothie Bowl Toppings:
  • 2-4 oz plain yogurt or greek yogurt
  • ¼ c old fashioned rolled oats
  • 1 tbsp nut butter or sprinkle of nuts
  • drizzle of raw honey
  • sprinkle of unsweetened coconut flakes
  • sprinkle of cocoa nibs or dark chocolate chips
Instructions
  1. Blend all ingredients together.
  2. Pour smoothie into two separate mason jars or bowls.
  3. Option to top with desired toppings.
Notes
*feel free to add additional health superfoods if you have them on hand -- i added 1" chunk of tumeric to this one. **make 2-3 green smoothies at a time. pour the leftovers into mason jars and freeze. i let thaw in my fridge overnight so i can grab and go in the morning.
