When we make a batch of Zucchini Apple Fritters, they don’t last long in our house. The kids pace the kitchen waiting for them to cool just enough to start eating. I have four boys {Oliver 9, Gus 7, Henry 5 + Walton almost 2} and the fritters are loved by all of them.
Actually when I made them for this guest post, I had to make 3 batches! The first batch was eaten before I could photograph them!
They were a great snack for the kids that day. And I love serving them as they are a very healthy and protein packed snack that will keep them full and help maintain energy levels.
So often a snack is just carb-filled or full of sugar and artificial this and that. Yes, it does take more time to prepare snacks instead of grabbing a box of pre-made snacks from the store, but as I’m in the kitchen making them, I feel grateful that I can make these options and I know deep down in my mama heart, it’s the right choice for us.
They’re a sweet little round pattie of fresh zucchini and apple, an egg {which is perfect for breakfast!} almond flour to help hold them together more and the delicious spice of cinnamon.

Fresh from the oven is of course our favorite way to eat them, but if you’re a plan-ahead mama and make them on the weekend for your #SundayMealPrep they’re still great! To store them, I’ve found layering them in an airtight container with parchment paper between the layers to be the best.
If you skip the parchment paper between the stacked fritters, they will stick to each other. Yeah, nobody wants to eat stuck-together fritters. So parchment paper is your friend here! Pop them into the fridge and they’ll keep for 3-4 days. To warm them up again, place them on a parchment lined baking sheet and bake for 5-8 minutes in a 350 degree oven. Not only will your house smell of warm cinnamon again, the fritters will crisp up again on the edges.

Do you think that coconut flour could be used in place of almond flour?
Yes, you could certainly use coconut flour instead of almond flour. Just be sure to squeeze the water from the shredded zucchini using a cloth before you mix + bake to avoid soggy fritters :). Enjoy! xo-Lindsey
