If you’re new to the blog welcome! My name is Lindsey and I love trail mix. If you’ve been following me for any amount of time, you probably know I’m a wee bit obsessed with trail mix. Remember that one time I told you about my ‘divorce fight’ with my husband revolving around trail mix…love you handsome {and I’m sorry for my irrational behavior, I blame being a women and hormones}.
Speaking of irrational behavior, does anyone else get hangry? If I haven’t eaten in 2-3 hours and I’m cranky or irritable just feed me, that’s typically the root cause. Hence why I love trail mix, it’s a healthy snack {when consumed in moderation} you can take with you anywhere.
Like packing a bag for you and your traveling companion on a three-hour road trip from Chicago to Michigan. Or packing your hubby a bag to take to the office. Although my sampling of tasters was small, I must admit this mix got raving reviews!
Thrill your tastebuds with crunchy pistachios and almonds, tart goji berries and sweet coconut. Hearty walnuts and rich blueberries round out the symphony of flavors, and dark chocolate pieces add an antioxidant-rich energy kick. Your body {and possibly your significant other} will thank you for this mood-lifting superfood snack mix!
So what makes this a ‘superfood’ trail mix? The nutrient-rich ingredients.
I recommend purchasing these ingredients from the bulk section at your grocer. That way you can choose exactly how much of each ingredient you purchase. Why purchase a pound of expensive pistachios {divorce fight number two when I purchased pistachios for this salad recipe} when you only need a half cup? Save money and try new ingredients, like goji berries, without buying more than you bargained for.
And you can easily substitute/omit nuts and dried fruit to fit your tastebuds. To be honest, I’m not a huge Brazil nuts fan and I’d probably exclude them from the recipe but with my thyroid deficiencies I try to eat three Brazil nuts a day for the selenium.
Which brings me to my final point. The ‘perfect superfood trail mix bite.’
For me the perfect bite is — one almond, 1 walnut, 1 pistachio, 2 goji berries, 2 blueberries, and one coconut chip.
And because this blend is mixed almost perfectly there’s no need to pick out your favorite ingredients and end up with a crummy bag of just peanuts.
Regardless of how you eat it, this healthy superfood trail mix is loaded with protein, healthy fats and fiber that’s sure to satisfy your stomach {and your tastebuds}!
To be honest, I can’t believe it’s actually taken me this long to post a trail mix recipe. Now on to developing a traveling trail mix recipe with veggies in it…
