this avocado soup is a perfect blend of creamy and filling minus the processed sugars and additives you’ll get from most cream based soups. here you’re getting creamy + healthy fats and nutrients from the amazing avocado.

Ingredients
  • 1 ripe avocado
  • 2 tbsp avocado oil
  • 1 lemon, juice of
  • 1 celery stalk
  • 1 green pepper
  • ½ c kale/spinach {greens of choice}
  • 1 tsp spirnula powder - optional
  • 1 small handful alfalfa sprouts - optional
  • salt and pepper
  • cayenne pepper
  • tumeric powder
  • fennel and/or cumin seeds
  • hemp
Instructions
  1. peel and de-seed avocado.
  2. combine avocado, avocado oil, juice of lemon, celery, green pepper, greens and spirnula in vitamix or food processor {if using vitamix put ingredients in this order: avocado oil, juice of lemon, spirnula, greens, celery, green pepper and avocado}. make sure vegetables are cut into approx. 1" chunks.
  3. add remaining spices to taste: salt, pepper, cayenne pepper, tumeric powder, fennel and/or cumin seeds.
  4. blend on high until desired consistency is reached. you may need to add water.
  5. vitamix will naturally heat ingredients as it blends but feel free to pour directly from vitamix into a saucepan on the stove and heat to desired temperature.
  6. let cool if needed and serve in a bowl. top with small handful alfalfa sprouts and hemp.
Notes
*not all ingredients are required to make the avocado soup; feel free to add/omit ingredients as you see fit. or use what you have on hand and make the recipe uniquely yours.
