Breakfast Meal Prep

  1. Blueberry Egg + Oat Muffins and baked eggs prepared using a non-stick silicon muffin pan and collapsable measuring cups. I must note, my husband always refuses to wash the muffin tin because it’s usually full of crusted on, hard to remove eggs; but he loves our new non-stick silicon muffin pan {no fuss and so easy to clean}!
  2. Yogurt + Berries Parfait prepped with collapsable measuring cups and packed in glasslock food storage Tupperware.
  3. Blueberry + Hemp Green Smoothie with ingredients pre-prepped in reusable (re)zip lunch bags which I store in the freezer so all you have to do is simply pour the ingredients into a vitamix high-performance blender, add your liquid of choice {I prefer nut milk} and enjoy. If you want to save your smoothie for an afternoon snack you can store it in a vacuum insulated food jar which will keep it fresh and cold for up to 24 hours {the insulated food jar is also great for keeping soups hot for up to 24 hours}.

  1. Everyday Green Sauce + Dressing from Pinch of Yum {aka 5 Minute Magic Green Sauce} prepared using a Cuisinart food processor. I’m pretty much obsessed with this Pinch of Yum recipe and I use it for dressings, sauces and veggie dipping!
  2. 5-Minute Green Goddess Quinoa Salad made into beautiful 1 liter on-the-go food jars. These mason jar salads are easy to measure out and prep with the help of collapsable measuring cups and the Aroma 6 quart pasta, rice and quinoa cooker.
  3. Blackened Salmon Taco Bowls which I adapted from my Blackened Salmon Taco Recipe and turned into ‘bowls’ using glasslock food storage Tupperware.

Snack Meal Prep

  1. superfood trail mix pre-portioned using collapsable measuring cups and reusable (re)zip lunch bags because I’d eat an entire container of trail mix if I had access to it.
  2. chocolate tahini energy bites made in 5 minutes or less using a Cuisinart food processor.
  3. raw carrots + celery with tahini easily stored in 1 liter on-the-go food jars for accessible snacking. And I must say if you haven’t tried this snack combo yet, you’re missing out!
  4. cut up fresh citrus because we all know we’re more likely to actually eat the fresh fruit in our fridge if it’s washed, chopped and easily accessible. But sometimes produce can expire quickly when pre-washed and chopped, which is why I love storing my fresh fruits and veggies in produce saver storage containers {it always extends the life of my fresh produce}.
