Hello Summer ☀️! Bring on the pool parties, grill-outs, weekends at the cabin, and all things fun in the sun.
I live for summer weekends in Minnesota. If I’m not traveling with mr. handsome to a volleyball tournament, you can find me at behind my dad’s boat wakeboarding. I’m super fortunate to have grown up on a lake and I love getting back to my parents lake home as much as I can in the summer.
And I don’t know about you, but I’d rather be basking in the sun or chasing after my nephew than in the kitchen cooking on hot summer days. I pretty much live off simple salads and grilled dinners. Which is why I love this easy, no-bake, watermelon and berry fruit pizza.
It’s the perfect, sweet and healthy treat to cool you down on a hot summer day. And did I mention that you can make it in five minutes or less!
I shared this recipe a couple weeks ago on The Jason Show and it was a huge hit, so I knew I had to add it to the blog too. Seeing as this red, white, and blue slice of heaven has the upcoming Fourth of July holiday written all over it!

The perfect summertime dessert that’s delicious, healthy, and so easy you can pull it together in 5 minutes or less {like when you husband invites friends over and tells you an hour before they arrive}. And if there’s leftovers, you can enjoy a cool slice of this dessert for breakfast.
Simply, top a large slice of watermelon with Greek yogurt {or coconut cream} and berries of your choice. Then drizzle with a little honey and savor the sweet summertime ahead.
This looks great! What kind of greek yogurt do you use? Plain, fat free, 1%, etc? In my experience greek yogurt taste tends to vary a lot! Thanks 🙂
Hi Taylor! You’re so right, I’m amazed how different some of the Greek Yogurts taste. I’m a plain, full fat or 2% type of gal (love my healthy fats)! My favorite brands are Fage and Siggi’s! Hope that helps and enjoy making these slices of cool, refreshing fruit heaven! xo-Lindsey
