Baked Plantain Chips {plantains, coconut oil, sea salt…it’s that simple}

i made an impulse plantain chip purchase in the checkout line at whole foods one time, and well, now i can’t go to whole foods without purchasing their homemade plantain chips {trader joe’s has some pretty mean plantain chips too}.

i’ve finally come to my senses and realized that instead of paying some outrageous whole foods price for a small container of plantain chips {which i easily devour in one sitting}, that i can make my own at home for much cheaper {and avoid any unnecessary oils i don’t want added to my chips; since they don’t usually need to be preserved as they are gone within days}.

so here’s my simple 3 ingredient plantain chip recipe that i hope you’ll enjoy as much as i do.

all you need is: 1-2 plantains {they even sell them at target, next to the bananas}, coconut oil and sea salt {pictured above}.

the greener the plantain the better in this case as it will be less ripe and more firm and starchy which makes for easier cutting and chip making.

cutting the plantain is the hardest part in my opinion and i’ve finally mastered how to ‘peel’ a plantain by slicing the thick skin {much thicker than a banana} vertically down the plantain {pictured above}.

once you’ve diced your plantain into thin chip-like slices {the thiner the better if you’re like me and like you’re chips crunchy}, thinly coat the slices with coconut oil {pictured above}.

then line baking sheet with parchment paper and separate the chips onto the baking sheet {pictured below}. sprinkle chips with pink himalayan sea salt {or regular sea salt}.

bake chips at 350 degrees for 20-25 min, until golden brown {i like mine extra crunchy so i usually even let a couple burn}. let the chips cool and happy snacking.

if you’re the ‘dipper’ type you can enjoy these delicious chips with a side of guacamole or nut butter…just try to save some for later :).

Ingredients
  • 1-2 plantains
  • 2-6 tbsp coconut oil, melted {2-3 tbsp per plantain}
  • pink himalayan sea salt to taste
Instructions
  1. heat oven to 350.
  2. thinly slice plantain{s} and place in a large mixing bowl.
  3. thinly coat sliced plantain chips in melted coconut oil {2-3 tbsp per plantain}.
  4. place chips on baking sheet lined with parchment paper.
  5. sprinkle chips with pink himalayan sea salt {or regular sea salt}.
  6. bake chips at 350 for 20-25 min, until golden brown edges.
  7. cool and enjoy snacking.
Notes
