Description
My go-to fresh, fast and filling make ahead cold lunch salad.
Ingredients
Scale
- 2 c cooked quinoa, cooled
- 1 c fresh blueberries
- 2 c kale, shredded
- ½ c raw almonds, sliced
- salt and pepper to taste
- mint leaves to taste, chopped (10-20 leaves)
- optional: ¾ c goat cheese or feta cheese crumbles
- optional: 1 avocado, sliced
- 1–2 lemons (juice of 1–2 lemons)
- 4–6 tbsp extra virgin olive oil
Instructions
- In a large bowl combine quinoa, blueberries, kale, almonds, mint leaves and optional goat or feta cheese and avocado.
- Mix until well combined.
- Add olive oil and lemon juice and toss to fully coat.
- Season with salt and fresh ground pepper to taste.
Notes
*I love to make a large batch of this and then divide it into mason jars for on-the-go lunch (1-2 cups) or snacks (1/2-1 cup).
