Mix and Match {zucchini salad with Thai sauce}

hosting or attending a fun-filled friend or family gathering and in need of a deliciously, healthy and creative spin on a cold pasta salad? or just looking for a super-yummy cold lunch salad to make in bulk for the week? than this is just the salad for you.

first, i use my spiralizer to spiralize the zucchinis into thin noodle like ribbons {pictured above}. i have the paderno world cuisine tri-blade plastic spiral vegetable slicer, but no need to fret if you don’t have a veggie spiralizer. you can always use a vegetable peeler to slice the zucchinis into long, thin slices too.

until i can afford to hire myself a personal veggie chopper {i know they have all those fancy kitchen gadgets that chop, chop, chop now but let’s be honest how often do we really pull them out} i make it easy on myself and purchase trader joe’s healthy 8 chopped veggie mix for $2.99 {pictured below}. if you don’t shop at trader joe’s you can pick up a chopped veggie mix to your liking or just chop up veggies the good old fashioned way {broccoli, carrots, green and red cabbage, jicama, green pepper, radish, celery}.

once my noodles are spiralized and my veggies are chopped and ready to go, it’s onto the spicy thai peanut sauce. saute the garlic, cayenne pepper, ginger and peanut butter with the oils over medium heat for 3-5 min. you can see the oils of my choice pictured below.

once you have the noodles spiralized and the sauce heated and cooled, it’s as easy as combining the noodles, chopped green onions, trader joe’s healthy 8 chopped veggie mix or chopped veggies of choice in a large mixing bowl, mixing the cooled sauce over noodles and veggies, and topping with pea shoots and peanuts.

now that’s my kind of pasta salad; you get the satisfying, carby pasta comfort with the fresh veggie flavor…not to mention probably more veggies than you typically get at a family/friend gathering all in one dish. enjoy.

Ingredients
  • ingredients for salad:
  • 3 zucchini, julienned or spiralized
  • 1 c green onion, chopped
  • trader joe’s healthy 8 chopped veggie mix or chopped veggies of choice {broccoli, carrots, green and red cabbage, jicama, green pepper, radish, celery}
  • 1 c pea shoots
  • raw, unsalted peanuts
  • ingredients for dressing:
  • 2 tbsp extra virgin olive oil
  • 1 tsp toasted sesame oil
  • 4 tbsp bragg’s liquid aminos {option with coconut}
  • 4 tbsp natural, unsalted peanut butter
  • 2 cloves garlic, pressed or minced
  • 1” chunk ginger, grated or minced
  • cayenne pepper to taste
Instructions
  1. using a mandolin or spiralizer, julienne or spiralize the zucchini into thin noodle like ribbons. or you can use a vegetable peeler to slice the zucchini into long, thin slices.
  2. for the sauce, saute the garlic, cayenne pepper, ginger and peanut butter with the oils over medium heat for 3-5 min. remove sauce from heat and let cool.
  3. combine the zucchini noodles, chopped green onions, trader joe’s healthy 8 chopped veggie mix or chopped veggies of choice in a large mixing bowl.
  4. mix cooled sauce over noodles and veggies.
  5. top salad with pea shoots and peanuts and serve.
Notes
**if you don't have a veggie spiralizer. you can always use a vegetable peeler to slice the zucchinis into long, thin slices too.
