An easy, delicious, FREEZER-FRIENDLY snack: Cashew Butter Energy Bites! The whole family will love these on-the-go snacks, and they’re especially great for breastfeeding mamas!
Ingredients

- 1 c Pitted Medjool Dates {~15}, soaked
- 2 c Rolled Oats
- 1 c Cashew Butter, drippy {can substitute another nut butter or seed butter}
- 1 tsp Vanilla Extract
- Sea Salt to Taste {I like a lot}
- OPTIONAL: ยฝ c chocolate chips {I prefer to make ยฝ batch without chocolate chips + ยฝ batch with}
Instructions
- Remove pits from dates and soak in lukewarm water for about 10 minutes to soften.
- Place rolled oats in a high speed food processor and process on high for about one minute until you’ve formed a thicker consistency oat flour.
- Add the rest of the ingredients to the food processor and process for another 2-3 minutes until your dough is formed. It should look and feel like cookie dough.
- Using a 1 tablespoon measure, scoop out dough and then roll between your palms to form your balls. Enjoy!
Notes
Store energy bites in an airtight container in the refrigerator or freezer.
Store in the fridge for 7 days or in the freezer for up to 6 months.
