Zucchini Noodle Salad with Spicy Thai Peanut Sauce

Satisfying pasta salad made entirely with fresh vegetables!
  • ingredients for salad:
  • 3 zucchini, julienned or spiralized
  • 1 c green onion, chopped
  • trader joe’s healthy 8 chopped veggie mix or chopped veggies of choice {broccoli, carrots, green and red cabbage, jicama, green pepper, radish, celery}
  • 1 c pea shoots
  • raw, unsalted peanuts
  • ingredients for dressing:
  • 2 tbsp extra virgin olive oil
  • 1 tsp toasted sesame oil
  • 4 tbsp bragg’s liquid aminos {option with coconut}
  • 4 tbsp natural, unsalted peanut butter
  • 2 cloves garlic, pressed or minced
  • 1” chunk ginger, grated or minced
  • cayenne pepper to taste
  1. using a mandolin or spiralizer, julienne or spiralize the zucchini into thin noodle like ribbons. or you can use a vegetable peeler to slice the zucchini into long, thin slices.
  2. for the sauce, saute the garlic, cayenne pepper, ginger and peanut butter with the oils over medium heat for 3-5 min. remove sauce from heat and let cool.
  3. combine the zucchini noodles, chopped green onions, trader joe’s healthy 8 chopped veggie mix or chopped veggies of choice in a large mixing bowl.
  4. mix cooled sauce over noodles and veggies.
  5. top salad with pea shoots and peanuts and serve.
**if you don't have a veggie spiralizer. you can always use a vegetable peeler to slice the zucchinis into long, thin slices too.
