This 30 minute Teriyaki Salmon bowl is loaded with flavor and nutrition; fill your bowl fresh veggies topped with Wild Alaskan Sockeye Salmon and a homemade teriyaki sauce.
  • 2 Wild Sockeye Salmon Fillets {Surrender Salmon}
  • Teriyaki Sauce:
  • 4 tbsp tamari or soy sauce or Bragg's liquid aminos
  • 2 tsp honey
  • 1 tsp minced garlic
  • Bowl Ingredients:
  • 1 c cooked brown rice
  • 2 c fresh spinach
  • ¼ head red cabbage, chopped
  • ½ c edamame, shelled
  • 1 large carrot, grated
  • 2 green onions, sliced
  • 2 tsp toasted sesame seeds
  • 1-2 tsp olive oil
  1. Preheat oven to 400 and cover a baking sheet with aluminum foil.
  2. Wash and chop all vegetables as needed.
  3. Place brown rice, 1½ cups water and a pinch of salt and pepper in medium pot over medium heat. Bring to a boil, cover and reduce heat to low. Cook approximately 25 minutes until done.
  4. In a small pan over medium heat combine soy sauce, honey and garlic; stir frequently until mixed well (1-3 minutes).
  5. Place thawed salmon fillets, skin side down, on baking sheet and brush with teriyaki sauce. Save unused teriyaki sauce to drizzle over finished bowls.
  6. Place salmon in the oven and bake for 12-14 minutes {note, the salmon will continue to cook for a few minutes once removed from the oven when cooling}.
  7. While the salmon is cooking, drizzle olive oil into a large skillet, add spinach and heat over medium heat until spinach starts to wilt (2-3 minutes). Feel free to add salt, pepper and garlic to desired taste.
  8. Assemble bowls -- divide brown rice between bowls; top with spinach, shredded carrot, edamame, red cabbage, green onions, salmon fillets, sesame seeds, and any remaining teriyaki sauce. Enjoy!
