no-bake chocolate cashew lactation cookies

These no-bake chocolate cashew lactation cookies are naturally sweetened with dates, packed with iron-rich oats {which are known to support milk supply for most women}, and a little bit of honey. Ultimately, they are perfect energy bite for nursing moms.
Ingredients
  • 1 c pitted medjool dates {~15}
  • 2 c rolled oats
  • 1 c cashew butter, drippy
  • ½ c honey
  • 1 tsp vanilla extract
  • pinch of sea salt
  • ~40 chocolate chips {for the center of each ball}
Instructions
  1. Place rolled oats in a high speed food processor and process on high for about one minute until you've formed oat flour.
  2. Then, add the rest of the ingredients and process for another 1 to 2 minutes until your dough is formed. It should look and feel like cookie dough.
  3. Using a 1 tablespoon scooper, scoop out dough and then roll between your palms to form your balls. Place a chocolate chip in the center of each ball.
  4. Enjoy!
