5-ingredient peanut butter + chocolate crunch cookies {aka special k or scotcharoo cookies}

Crispy, crunchy, yet ooey and gooey peanut butter + chocolate crunch cookies {aka special k or Scotcharoo cookies} made with only five, wholesome ingredients; no syrup or sugar additives!
  • 1 c creamy natural peanut butter
  • ⅓ c honey
  • 3 ½ c Love Grown Bean Flakes {or corn flakes}
  • 1 c dark chocolate chips
  • ½ tbsp coconut oil
  1. In a large bowl, use a spoon or your hands to mix together the peanut butter, honey and corn flakes. Mix well until the corn flakes are fully coated.
  2. Line a baking sheet with parchment paper. Make cookies with your hands out of the cereal mixture and transfer to the baking sheet. Set aside.
  3. Bring a pot of water to a boil. Combine the dark chocolate chips and coconut oil in a glass bowl slightly larger than the pot with the water. Set the glass bowl over the boiling water, and stir until the chocolate chips are melted into a smooth chocolate.
  4. Drizzle the melted chocolate over the cookies.
  5. Place cookies the fridge until set {30-60 minutes}. Enjoy!
*Note cookies are best served cold as they will hold together better when cold.
**Store leftover cookies in fridge or freezer.
