When I think light, healthy recipes to tighten up, I think Slow Cooker Detox Vegetable Soup; loaded with fresh vegetables, vitamins, and minerals.
  • 2 large carrots, chopped
  • 3 celery stalks, chopped
  • 2 c kale leaves, stems removed {I used kalettes a kale + Brussels Sprout hybrid}
  • 1 c butternut squash, cubed
  • 2 garlic cloves, diced finely
  • 1" chunk fresh ginger, peeled and diced finely
  • ½ tsp ground turmeric
  • 1 tsp sea salt
  • ½ tsp fresh ground black pepper
  • 5 c water {or 3 c water and 2 cups low sodium vegetable stock}
  • optional: additional veggies of choice {I added some additional green + purple cabbage}
  • optional: fresh cilantro, parsley or additional fresh herbs of choice
  1. Place all ingredients, and any additional optional veggies/ingredients you'd like to add, in a large pot or slow cooker.
  2. Cover and bring to a boil, then reduce the heat to a simmer for 4 hours.
  3. Enjoy as vegetable soup {or add protein for choice} or strain and enjoy as warm broth.
*Enjoy as vegetable soup or strain and enjoy as warm broth.
**Store leftovers in glass containers {mason jars work great} in the fridge for up to one week or freeze for up to 6 months.
