5-minute green goddess quinoa salad

A healthy blend of colorful veggies that can be tossed together in 5-minutes or less; this 6-ingredient green goddess quinoa salad is every busy woman's dream bowl.
  • Salad:
  • ½ c cooked quinoa
  • 2 c broccoli kale slaw {i personally love trader joe's}
  • ¼ c cucumber, diced
  • ¼ c red onion, diced
  • ¼ avocado, diced
  • ¼ c sliced almonds
  • Dressing:
  • ½ fresh lemon, squeezed
  • 1 tbsp extra virgin olive oil
  • salt + pepper to taste
  1. Combine quinoa, broccoli kale slaw, cucumber, red onion and avocado in a large bowl.
  2. Add fresh lemon, olive oil, salt and pepper to taste and toss all ingredients together.
  3. Top with sliced almonds and enjoy!
*Feel free to double recipe to make a larger side salad for group dining.
**Add additional protein of choice to make this a more hearty salad.
***I personally love Trader Joe's broccoli kale slaw blend.
