A healthy blend of colorful veggies that can be tossed together in 5-minutes or less; this 6-ingredient green goddess quinoa salad is every busy woman's dream bowl.
Ingredients
Salad:
½ c cooked quinoa
2 c broccoli kale slaw {i personally love trader joe's}
¼ c cucumber, diced
¼ c red onion, diced
¼ avocado, diced
¼ c sliced almonds
Dressing:
½ fresh lemon, squeezed
1 tbsp extra virgin olive oil
salt + pepper to taste
Instructions
Combine quinoa, broccoli kale slaw, cucumber, red onion and avocado in a large bowl.
Add fresh lemon, olive oil, salt and pepper to taste and toss all ingredients together.
Top with sliced almonds and enjoy!
Notes
*Feel free to double recipe to make a larger side salad for group dining. **Add additional protein of choice to make this a more hearty salad. ***I personally love Trader Joe's broccoli kale slaw blend.
