4-Ingredient Chocolate Mousse with Collagen

super easy, 4-ingredient chocolate mousse packed with collagen protein. no heating, no fuss; just a bit of chilling and whipping for a delicious and healthy treat.
Ingredients
  • 1 can full fat coconut milk {refrigerated for 8 or more hours}
  • 2-4 tbsp raw cacao powder {depending on your level of preferred chocolatey-ness}
  • 2 scoops vital proteins collagen peptides
  • 2 tsp cinnamon
  • optional: ½ c fresh berries for topping
Instructions
  1. place the can of coconut milk in the refrigerator for at least 8 hours {overnight}. This will cause the cream to separate from the milk. open the can of coconut milk from the bottom and scrape out the cream into a medium sized mixing bowl. {ps - you can save the milk and use it for smoothies}.
  2. add the raw cacao powder, collagen peptides and cinnamon to the coconut cream.
  3. whip the mixture with a hand mixer or kitchenaid mixer for 5-8 minutes.
  4. place the bowl in the fridge until ready to serve {let set in fridge for at least 20 minutes, but mixture gets even more thick and creamy if you let it set overnight}.
  5. place in serving bowls, top with berries and enjoy!
Notes
*enjoy it straight from the bowl, top it with some berries, or use it as a fluffy, chocolate cream filling.
