easy watermelon + berry fruit pizza

Fruit pizza made with watermelon, berries and greek yogurt; healthy, delicious, and so easy even the kids can make it in 5 minutes or less!
  • ¼ watermelon, one large vertical slice
  • ¼ c Greek yogurt or coconut cream
  • 8-10 blueberries
  • 6 raspberries
  • 5 strawberries, halved
  • 4-6 blackberries
  • 2 sprigs fresh mint, chopped
  • 1 tbsp unsweetened, shredded coconut
  • optional: 1 tbsp honey
  1. Cut a large piece of watermelon vertically, this will be the base of the 'pizza'.
  2. Spread Greek yogurt evenly across the watermelon. You can also add some honey to sweeten it up; or use whipped coconut cream instead of Greek Yogurt.
  3. Top with berries or fruit of your choice, sliced as needed.
  4. Add any additional toppings, like mint leaves, shredded coconut or grated chocolate.
  5. Cut into triangle-sized 'pizza' slices and enjoy!
