brussels sprout skewers

brussels sprouts, cranberries and goat cheese {or cheese of your choice} and that's it! just 3 ingredients and 3 simple steps to the quickest, most beautiful app you've ever brought to a holiday party.
Ingredients
  • 1 c brussels sprouts, chopped in halves
  • 3 cloves garlic, minced
  • 2 tsp extra virgin olive oil
  • sea salt and pepper to taste
  • ½ c fresh cranberries
  • ¼ c goat cheese crumbles {or cheese of your choice}
  • toothpicks
Instructions
  1. preheat oven to 350 degrees.
  2. wash brussels sprouts, remove ends and chop in halves.
  3. place the brussels sprouts in a large zip lock bag with oil, garlic and salt/pepper to taste. shake bag to evenly coat and season brussels sprouts.
  4. place brussels sprouts on a baking sheet lined with parchment paper. try to spread on half of the baking sheet if possible {saving the other half for the cranberries you will add half way through roasting}.
  5. bake at 350 for 10-15 minutes.
  6. remove brussels sprouts from oven and add the fresh cranberries to the other half of the baking sheet.
  7. continue baking at 350 for an additional 10 minutes, until brussels sprouts are golden brown.
  8. remove brussels sprouts and cranberries from oven and let cool.
  9. assemble skewers -- brussels sprout half, goat cheese crumbles, cranberry -- with toothpick.
Notes
*this recipe serves 6-8 with approximately 2-3 skewers per serving. feel free to double or triple this recipe to serve larger parties.
