pumpkin is full of nutrients — like vitamin C and fiber and it's an excellent source of vitamin A — so here's my take on a pumpkin spice green smoothie; pumpkin + spinach never tasted so good. you can dress this one down with fewer ingredients and rely on the clean, slightly sweet taste of pumpkin puree. or you can dress it up to make it taste more like pumpkin spice dessert bowl.
  • Green Smoothie Ingredients:
  • ½ - ¾ c almond milk {depending on thickness you desire}
  • ½ c pure pumpkin puree
  • 1-2 c spinach
  • 1 tsp pumpkin pie spice
  • 1 tsp ground cinnamon
  • 1 tbsp ground flax seeds
  • ice
  • Optional Ingredients:
  • ½ - 1 ripe banana, diced {frozen}
  • ¼-½ avocado or 1 tbsp nut butter
  • 1 scoop whey, hemp or vegan protein of choice
  • Optional Smoothie Bowl Toppings:
  • 2-4 oz plain yogurt or greek yogurt
  • ¼ c old fashioned rolled oats
  • 1 tbsp nut butter or sprinkle of nuts
  • drizzle of raw honey
  • sprinkle of unsweetened coconut flakes
  • sprinkle of cocoa nibs or dark chocolate chips
  1. Blend all ingredients together.
  2. Pour smoothie into two separate mason jars or bowls.
  3. Option to top with desired toppings.
*feel free to add additional health superfoods if you have them on hand -- i added 1" chunk of tumeric to this one. **make 2-3 green smoothies at a time. pour the leftovers into mason jars and freeze. i let thaw in my fridge overnight so i can grab and go in the morning.
