If I’m honest, I’m shoveling handfuls of trail mix in my mouth as I type this. {I’m testing a new superfood trail mix recipe for the blog next week; it’s required I make sure all 8 servings are edible before I share the recipe with you guys}! Although I love my crunchy, slightly salted nuts paired with rich, dark chocolate, I also love my greens.
You see the way I look at it is — my love of greens and daily salad consumption off-sets my love of trail mix and daily nut consumption. Rational? No. A delicious lifestyle? Yes!
Regardless, I’m a salad lover and I’m proud of it. If you’ve ever eaten a meal with me, you know I pretty much require some type of vegetable at every meal. This gets a bit challenging when I’m traveling, getting ready to move into a new home, and well, basically running around like a crazy women {hello month of May}.
But even when I’m traveling or my food prep game isn’t on point, I still strive for at least one salad a day, usually for lunch. I try to eat my live, raw salad greens earlier in the day when my digestive system is at it’s peak and opt for more roasted veggies in the evening when my digestive system is slowing down. Genius concept, right?
So how’s a woman supposed to eat a salad a day and not get bored?! Enter these 26 simple salad recipes I rounded up from some of my favorite, blogging foodies. Now the real question. Ok it’s past 9pm, which is my bedtime, so I should shut my computer and go to bed because I’m typing jokes that no one is going to laugh at, and I have a 6am flight to catch.

As a fellow greens lover, I can totally relate! It’s can be so hard to find good veggies when you’re travelling or running around. I’ll have to prep some of these salads so they’re ready to go for next week – they all look so yummy. Thanks for sharing Lindsey!
