We’re back with another variation of our 30 Minute Meal Series! So far Dietitian Stacie and I have teamed up to bring you breakfast in the form of a savory sweet potato, turkey sausage egg bowl + egg bake, made from the same wholesome ingredients {of course this meatless meal easily carries over into a dinner favorite too}. And dinner, lemon chicken with capers + garlic roasted veggies, a classic staple in both our households.
So now it’s time for a lunch recipe. Actually two lunch recipes with a very similar ingredient list, including some of my summer favorites — strawberries, spinach, and avocado.
I’m sharing a simple way to glam up your typical brown bag, turkey sandwich lunch. While Stacie is sharing a fresh Strawberry Spinach Salad with Strawberry Champagne Vinaigrette.
Both the sandwich and salad are easy to make, and they feed a small crowd or pack up nicely for work lunches and summer picnics!
This simple, yet much sexier, turkey sandwich is only six ingredients — sprouted grain bread {or wrap or collard green wrap}, deli turkey, strawberries, baby spinach, avocado, and alfalfa sprouts. That’s right, no mayo necessary thanks to the creamy, ripe avocado.
And you can stack this healthy, summer sandwich together in 5 minutes or less!
I originally intended this recipe to be a quick lunch fix, but I think it would make the perfect party platter. Ladies, as you know we are about to enter the season of bridal and baby showers.

No need to worry if you have vegans or vegetarians joining you because you can easily make this vegan-and-vegetarian-friendly by simply losing the turkey. With or without the protein, this strawberry spinach sandwich still provides a great deal of substance while packing plenty of flavor.
